Beefy Macaroni Casserole

Cook according to package directions:

1 lb box elbow macaroni

Drain & set aside.

In a pan, sauté until soft:

2 Tbsp vegetable oil

2 c green pepper, chopped

1 Tbsp garlic

Add:

2 lbs ground beef (choose lean beef, like 90% or 93% lean)

1 tsp basil

1 tsp cumin

1 tsp oregano

salt & pepper

Cook until beef is browned.

Add:

3 c canned crushed tomatoes

In a large bowl combine beef & macaroni.

Put in a 9×13 dish.

Top with:

2-3 c cheddar cheese

Bake at 350 for 20-25 minutes, or until cheese is melted & bubbly.

NOTES

  • This is delicious and makes a lot! It can easily be divided into 2 or 3 8×8 foil pans and frozen (before baking) for another occasion.
