Marinated Smelts

From the kitchen of Diomira Putano

Marinade:

1 1/4 c vinegar

1 c water

2 bay leaves

3 pieces orange peel

3 pieces lemon peel

6 pieces garlic

Marinate smelts.

To bake, prepare a pyrex dish with:

3 Tbsp oil

salt & pepper

Put fish in the dish.

Bake covered @ 350 for 30 minutes.

If there is still water in dish, put back in oven for 2-3 minutes, uncovered.

NOTES

  • These are commonly served at Christmas with pasta.
