Beat:
2 c sugar
1 c margarine
Add:
1 tsp lemon extract
2 eggs
1 lb ricotta
Add:
4 c flour
1 tsp baking soda
1/4 tsp salt
Grease and flour mini muffin tins.
Add batter.
Bake @ 350, 15 minutes.
Icing:
confectioner sugar
water
little lemon extract
