Beef Minestrone

Cut into bite size pieces:

1 pkg (about 1.6 lbs) Boneless beef chuck roast

Dust with flour.

Heat:

2 Tbsp olive oil

Sear meat until nicely browned.

Do NOT discard pan drippings.

Put meat in crockpot.

Add to pan with drippings, scrape up bits:

1 bag Minestrone Soup Vegetables (4 cups of Potatoes, zucchini, leeks, carrots, celery, onions & cabbage)

Season with:

Salt and pepper

Sauté a few minutes.

Add to crockpot.

Add to crockpot:

1 carton (32 oz) Beef stock

1 can (14.5 oz) Italian-style diced tomatoes

1 pkg (24 oz) Seasoned tomato sauce

Cook 4 1/2 – 6 hours on high or 8-10 hours on low.

30-45 minutes before serving add:

1/2 – 3/4 c dry Ditalini pasta

1 can (15.5 oz) Garbanzo beans, drained and rinsed

5 minutes before serving add:

1 pkg (6 oz) Baby spinach

NOTES

  • This crockpot recipe is from Wegmans. It’s perfect on a cold day.
