Marinated Eye Round

From the kitchen of Joan Knewasser

4-6 lb eye round roast (beef)

2-3 Tbsp butter

Sear well on all sides.

Place in roaster pan.

Cover with:

2-3 c water

2 cubes beef bouillon

1-2 medium onions, chopped

2 clove garlic, crushed

Cover.

Bake @ 325 for 3 hours.

Add more water if needed.

Cool in refrigerator OVERNIGHT.

NEXT DAY:

Skin off fat.

Slice meat thin.

Gravy

Meat drippings, 3 Tbsp flour. Beat with whisk.

(or 1 can Franco American gravy)

Pour over meat.

Put back in refrigerator & marinate 2-3 DAYS.

To serve:

Reheat in Corning pan @ 325-350 for 1 hour

  • This recipe takes days to marinate. Plan in advance.
